Authority okra cold



Ingredients

1 / 2 kg okra Medium

2 tbsp olive oil

1 onion, cut Julian

2 cloves garlic, sliced

2 tbsp green coriander, chopped

3 tomatoes, diced small

1 tablespoon tomato paste

1 / 2 cup water

   Salt and pepper

   Heavy oil for frying


Way

- Fried okra in the oil, for five minutes, then remove to paper towel to absorb excess oil and set aside.

- Heat olive oil in a pot on medium heat and add the onion and garlic and stir for 5 minutes.

- Add the coriander, tomatoes, tomato paste and water, leaving the mixture to begin to boil, then reduce the heat and leave the mixture for a few minutes to focus.

- Add the okra, season with salt and pepper, cover and let the mixture until the okra are cooked.

- Remove from the fire and served cold.
