Rice with chicken and red beans



Ingredients

1 / 2 cup olive oil

1 onion chopped

1 / 2 green pepper chopped

1 / 2 red pepper chopped

3 garlic cloves, minced

2 cups tomato puree (juice)

2 cups basmati rice boiled

1 chicken breast (without skin or bone), boiled and chopped medium

1 cup red beans boiled

1 teaspoon salt

1 / 2 teaspoon white pepper

1 teaspoon dry oregano crushed

1 teaspoon ground cumin

1 / 2 teaspoon ground coriander
 
Sour cream (sour cream) and grated mozzarella cheese for garnish

Way

- Heat oil in a pot over medium heat, add onion and green and red peppers and garlic, stirring for 5 minutes until tender.

- Add the tomato puree, rice, chicken and beans, stir the mixture and simmer on low heat for about 15 minutes, stirring from time to time.

- Season the mixture with salt and white pepper, add the Oregano, cumin, coriander, stirring until homogenous components.

- Put the rice in a serving plate and garnish with a little sour cream and mozzarella cheese.
